Great Grandma Lucia's Bread

Equipment

  • Stand-up mixer with dough hook
  • Bread pan

Ingredients
  

  • 2 packages Dry yeast I recommend Fleischmann's
  • 2 cups Lukewarm water
  • 2 cups Lukewarm milk
  • 2 tbsp Sugar Optional
  • 2 tbsp Shortening or butter
  • 7 cups Flour
  • 1 tsp salt

Instructions
 

  • Dissolve yeast and sugar (if using) in Luke warm water- let sit for 10 minutes. Add Luke warm milk, butter or shortening and half of flour- knead until smooth. Add salt and remaining flour- knead until smooth. Use “throw and roll” method; roll and throw on floured board several times. Make into a ball and place in a well greased bowl. Cover and set aside in a warm place until light; about 1.5 hours. Mold into loaves and place in bread pan filling half full. Cover and let rise for 1 hour, until double in size). Bake at 400°F for 15 minutes. Reduce temperature to 350°F and bake for 45 minutes or until top feels hollow (knock on the top). Let cool 15 minutes, then remove from bread pan and allow to cool completely on cooling rack.

Notes

Use dough hook on stand mixer on low speed to mix dough thoroughly. When letting dough rise, use a bigger bowl than you normally would; it is not uncommon that it will rise out of the bowl!
