Oatmeal Bread

Ingredients
  

  • 1 cake Dry yeast 2 1/4 tsp
  • 1/2 cup Lukewarm water
  • 2 cup Boiling water
  • 1/2 cup Rolled oats
  • 1/2 cup Pecan pieces
  • 1/4 cup Brown sugar
  • 2 tbsp Butter Melted
  • 4 cup Flour Sifted
  • 1 tsp salt

Instructions
 

  • Pour two cups boiling water over rolled oats , cover and let stand until lukewarm (about 10 minutes). Dissolve yeast and sugar in 1/2 cup lukewarm water, add melted butter and pecans- add to oatmeal/water mixture. Add one cup of flour, or enough to make an ordinary sponge. Beat well. Cover and set aside in a warm place to rise for one hour, or until light. 
    Add enough flour to make a dough (about 3 cups), add the salt. Knead well or use “throw and roll” method. Place in a well greased bowl, cover and let rise in a warm place until double in size (about 1.5 hours). Mould into loaves, fill well-greased pans half full, cover and let rise again for 1 hour. Preheat oven to 350°F. Bake for 45 minutes.
