Nita’s Chicken & Dumplings
- 4 Boneless, skinless chicken breasts
- 2 cup Flour
- 2 tsp Baking powder
- 1 tsp Salt
- 2 tsp Vegetable oil
- Hot Water
- Boil chicken breasts for 10-15 minutes (until cooked). Save broth to cook dumplings. Shred cooked chicken breasts and set aside. Sift together flour, baking powder, and salt. Mix dry ingredients with cooking oil. Add enough hot water to make a dough (not sticky). Knead dough. Roll out and cut into 1/2 in. strips. Drop dumplings into boiling broth and cook until dough is no longer sticky. Add chicken. Season with salt and pepper. Serve hot.
